Tato norma stanoví postup při odběru vzorků a při fyzikálním a fyzikálně chemickém zkoušení pekařských výrobků. Norma tedy stanovuje postupy odběru vzorků pro normalizované metody zjišťování (ověřování) některých kvalitativních znaků (jakosti) významných pro hygienu výživy. ČSN 56 0116 byla schválena 8.4.1974 a nabyla účinnosti od 1.8.1975. Nahradila ČSN 56 0116 z 19.3.1964. "Změnou a)-11/1990" se s účinností od 1.1.1991 ruší čl. 1 - 11 (nyní ČSN 56 0116 část 1 z 7.2.1990) a dále se ruší čl. 30 - 32 (nyní ČSN 56 0116 část 3 z 7.2.1990)
